Typical gastronomy

The cuisine of Comillas is a faithful reflection of its surroundings: seafaring, mountainous and deeply linked to the land and sea that surround it. Strolling through its streets is not only a feast for the eyes, but also an invitation to discover authentic flavors that have been passed down from generation to generation.

The Cantabrian Sea, which bathes this coastal town, is the main protagonist of its pantry. From it, treasures are extracted that arrive fresh on the tables of local bars and restaurants. The rabas (battered squid), crunchy and golden, are a must-see on any terrace. Crabs, barnacles, spider crabs and clams also stand out, served grilled or in simple preparations that respect their natural flavour. During the season, albacore tuna is the king of many cuisines, whether in pot, grilled or artisanal preserves.

Octopus is another of the Cantabrian delicacies that you can enjoy in Comillas. Prepared on the grill or Galician-style, its smooth texture and intense flavour make each bite an unforgettable experience in front of the sea.

The mackerel coast is a key event in Comillas, when this tasty oily fish arrives at port at its optimum point. Its firm and flavorful flesh is transformed into one of the most appreciated dishes of the local cuisine: mackerel meatballs, a traditional recipe that combines the freshness of the sea with the affection of home cooking. Juicy, aromatic and full of flavour, they are a gastronomic emblem of the town.

In addition to seafood, the Cantabrian tradition is felt in every spoonful of the cocido montañés, a spoon dish that combines white beans, cabbage, chorizo, black pudding and bacon, ideal for comforting the body after a day at sea or in the mountains. Also typical are the cheeses of Cantabria, such as the cream cheese or the picón de Tresviso, and the artisanal sausages of the region.

In the sweet terrain, the local pastries offer delicacies such as sobaos pasiegos, corbatas de Unquera (sugared puff pastry ties) or traditional quesadas, perfect to accompany a coffee while watching the sunset over the coast.

Comillas is, in short, a place where flavour and tradition meet. A town that is not only visited: it is savored, bite by bite.
